I have been a professional chef for 16 years, and gluten free for just over 5 years. This is one of the best gluten- free cookbooks I have found in many regards, but mostly because it makes gluten-free cooking simple. Many of the GF books out currently make you feel as if you need a chemistry degree to blend the all the flours and gums and miscellaneous ingredients together, or they are full of hard to find (and hard to afford) flours. Sanaa uses simple and available ingredients in a very refreshing and unassuming way. ANYONE can make these recipes, even a beginning cook, and the result will be spectacular. Sanaa's recipes are packed with nutrition and flavor, loaded with healthy clean ingredients, and certain to become favorites in your kitchen. Bravo! (PS: the falafel is fantastic...)
